    James Martin Beef Bourguignon

This James Martin Beef Bourguignon is a rich, slow-cooked French classic with tender beef, silky sauce, and deep, comforting flavour. How to Make James Martin Beef Bourguignon

    • Prepare the oven: Preheat the oven to 160°C or 140°C fan. Place a shelf in the middle of the oven so the casserole cooks gently and evenly.
    • Coat the beef: Season the beef generously with salt and pepper, then toss with the flour so each piece is lightly coated.
    • Brown the meat: Heat the olive oil in a large ovenproof casserole. Brown the beef in batches until well coloured, then remove and set aside.
    • Cook the base: Add the bacon lardons to the same pan and fry until golden. Stir in the onions and carrots and cook for 5 minutes until softened. Add the garlic and tomato purée and cook for 1 minute.
    • Build the sauce: Return the beef to the casserole. Pour in the red wine and beef stock, scraping up any caramelised bits from the base. Add the bay leaves and thyme.
    • Slow cook: Bring to a gentle simmer, cover with a lid, then transfer to the oven. Cook for about 2½ hours until the beef is very tender.
    • Prepare the mushrooms: Near the end of cooking, heat the butter and olive oil in a frying pan. Fry the mushrooms until golden and set aside.
    • Finish the dish: Stir the mushrooms into the casserole, check seasoning, and sprinkle with chopped parsley before serving.

    Tips for Perfect Beef Bourguignon

    Why is my beef tough?

The beef needs time. Keep cooking gently until it softens. Tough beef usually means it needs longer in the oven.

Can I make this ahead of time?

How do I thicken the sauce?

If the sauce is thin, simmer uncovered on the hob for 10 to 15 minutes until reduced.

  • James Martin Roast Potatoes

    James Martin Roast Potatoes

These roast potatoes are everything a proper Sunday roast deserves. Crisp and deeply golden on the outside with a soft, fluffy middle, they are simple to prepare but deliver outstanding flavour. This is an easy recipe that relies on good potatoes, hot fat, and careful timing. From start to finish, they are ready in just over an hour and well worth the wait.

    Ingredients

    For the potatoes

    • 1.5kg Maris Piper potatoes
    • 2 litres cold water
    • 1 tsp salt, plus extra for seasoning

    For roasting

    • 4 tbsp goose fat or duck fat
    • 2 tbsp olive oil
    • Freshly ground black pepper

How to Make James Martin Roast Potatoes

    • Prepare the oven: Preheat the oven to 220°C or 200°C fan. Place a sturdy roasting tray inside with the goose fat and olive oil so it heats until shimmering hot.
    • Peel and parboil: Peel the potatoes and cut them into even-sized chunks. Place in a large pan, cover with cold water, add the salt, and bring to the boil. Simmer for 8 to 10 minutes until the edges are just starting to soften.
    • Rough them up: Drain the potatoes thoroughly, then return them to the pan. Shake the pan gently to fluff up the edges. This is the key to a crisp exterior.
    • Roast: Carefully tip the potatoes into the hot fat, turning them so they are well coated. Season with salt and pepper. Roast for 45 to 55 minutes, turning once or twice, until deeply golden and crisp.
    • Finish and serve: Taste and adjust seasoning if needed. Serve immediately while piping hot and crunchy.
How to Make James Martin Roast Potatoes

    Tips

    Why aren’t my potatoes crispy?

Make sure the fat is properly hot before adding the potatoes and do not overcrowd the tray. Space allows steam to escape and crispness to develop.

    Should I boil them longer?

Parboil just until the edges soften. Overboiling will cause them to break up and absorb too much water.

Can I use vegetable oil only?

You can, but goose or duck fat adds depth of flavour and superior crisping. If using oil alone, choose one with a high smoke point.

    Serving Suggestions

    • Serve with roast chicken, beef, or lamb
    • Perfect alongside gravy and seasonal vegetables
    • Lovely with a spoon of mustard or horseradish on the side

    Storage

    Room temperature

These are best eaten straight away and should not be left out for more than 2 hours.

    Refrigerator

Store leftovers in an airtight container for up to 2 days. Reheat in a hot oven to restore crispness.

    Freezing

Roast potatoes can be frozen, but the texture will soften. Freeze in a single layer, then reheat from frozen in a hot oven.

    FAQs

What potatoes are best for roast potatoes?

Floury potatoes such as Maris Piper or King Edward give the crispiest outside and fluffiest centre.

Can I make these ahead of time?

You can parboil and rough up the potatoes a few hours ahead, then roast just before serving.

Do I need to turn the potatoes while roasting?

Yes, turning once or twice helps them colour evenly and prevents sticking.

Can I add herbs or garlic?

Yes, add whole garlic cloves or rosemary for the last 20 minutes to avoid burning.

James Martin Saturday Morning Lasagne Recipe

How to Make James Martin Saturday Morning Lasagne

    • Prepare the oven: Preheat the oven to 200°C or 180°C fan. Place a shelf in the middle of the oven so the lasagne cooks evenly and browns nicely on top.
    • Start the meat sauce: Heat the olive oil in a large pan over medium heat. Add the onion, garlic, carrot, and celery, then cook for 5 to 7 minutes until soft and fragrant.
    • Brown the beef: Add the beef mince and cook until browned, breaking it up with a spoon so there are no large lumps.
    • Build the flavour: Stir in the tomato purée and cook for 1 minute. Add the chopped tomatoes, beef stock, oregano, thyme, salt, and pepper. Simmer gently for 25 to 30 minutes until thick and rich.
    • Make the béchamel: Melt the butter in a saucepan over low heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth, then cook until thickened. Stir in the Cheddar, nutmeg, salt, and white pepper.
    • Assemble the lasagne: Spoon a layer of meat sauce into the base of a baking dish. Add lasagne sheets, followed by béchamel. Repeat the layers, finishing with béchamel on top.
    • Add the topping: Sprinkle the Parmesan evenly over the top to create a golden crust.
    • Bake: Bake for 40 to 45 minutes until bubbling and golden. If the top browns too quickly, cover loosely with foil.
    • Rest and serve: Remove from the oven and let the lasagne rest for 10 minutes before slicing. This helps the layers hold together.

    Tips for Perfect Lasagne

    Why is my lasagne watery?

This usually happens if the meat sauce is too thin. Simmer it until thick and rich before assembling.

How do I stop the top from burning?

Cover loosely with foil if the cheese browns too quickly, then uncover for the final 10 minutes.

Should I pre-cook the lasagne sheets?

Most dried lasagne sheets soften perfectly during baking. Make sure the sauces fully cover them.

Can I make this ahead of time?

Yes, assemble the lasagne, cover, and refrigerate for up to 24 hours before baking.

    Serving Suggestions

    • Serve with a crisp green salad and vinaigrette
    • Add garlic bread or focaccia on the side
    • Pair with lightly steamed green beans or broccoli

What size dish works best for lasagne?

A dish around 23 x 30cm is ideal for even layers and consistent baking.

Can I use fresh pasta sheets?

Tips for the Best Shepherd’s Pie

Rough up the mash with a fork and place the dish on a higher shelf for the last 5 minutes if needed.

Yes, assemble the pie completely, cover, and refrigerate for up to 24 hours before baking.

    James Martin Dauphinoise Potatoes

How to Make James Martin Dauphinoise Potatoes

    • Prepare the oven: Preheat the oven to 180°C or 160°C fan. Rub an ovenproof dish generously with the cut garlic, then grease well with butter.
    • Slice the potatoes: Slice the potatoes thinly using a sharp knife or mandoline. Aim for even slices so they cook at the same rate.
    • Warm the cream: Place the double cream, milk, bay leaf, thyme, and nutmeg into a saucepan. Heat gently until just below simmering, then remove from the heat and set aside for 5 minutes to infuse.
    • Layer the dish: Arrange a layer of potatoes in the dish, slightly overlapping. Season lightly with salt and pepper. Repeat until all the potatoes are used.
    • Add the cream: Remove the herbs from the cream mixture, then pour it evenly over the potatoes. Press the potatoes down gently so they are mostly submerged.
    • Bake slowly: Cover the dish with foil and bake for 50 minutes. Remove the foil and return to the oven for a further 20 to 25 minutes until golden and tender.
    • Rest before serving: Remove from the oven and leave to stand for 10 minutes. This helps the layers settle and makes serving easier.

    Tips for Perfect Dauphinoise Potatoes

How do I stop the potatoes from curdling?

Keep the oven temperature moderate and avoid boiling the cream. Gentle heat gives a smooth, silky finish.

Should the potatoes be fully covered in cream?

They should be mostly submerged but not swimming. Press them down gently before baking if needed.

Can I prepare this in advance?

Yes. Assemble the dish, cover, and refrigerate for up to 24 hours. Bring to room temperature before baking.

Why are my potatoes still firm?

The slices may be too thick or the dish too deep. Thin, even slices cook best.

    Serving Suggestions

    • Grilled sausages or pork chops
    • Steamed green beans or buttered cabbage
    • A crisp green salad to balance the richness

Do not leave dauphinoise potatoes at room temperature for more than 2 hours.

    Refrigerator

    Freezing

Freezing is not recommended as the cream can split and the texture may become grainy.

Tips for the Best Cottage Pie

How do I get a golden topping?

Can I prepare this ahead of time?

Yes. Assemble the pie, cool completely, cover, and refrigerate for up to 24 hours before baking.

How to Make James Martin Fruit Scones

    • Prepare the oven and tray:Preheat the oven to 220°C, or 200°C fan. Line a large baking tray with baking parchment and set it aside.
    • Mix the dry ingredients:Sift the flour and baking powder into a large bowl. Stir in the caster sugar, then add the cold butter. Rub it in with your fingertips until the mixture looks like fine breadcrumbs.

    • Bake:Brush the tops lightly with milk. Bake for 12 to 15 minutes, until well risen and lightly golden on top.
    • Cool and serve:Transfer the scones to a wire rack and allow them to cool slightly before serving warm.

Make sure the butter is cold and avoid overworking the dough. A hot oven also helps create a good rise.

How do I keep scones soft?

Handle the dough gently and do not add too much flour when shaping. Overmixing leads to dense scones.

    Can I make them sweeter?

You can increase the sugar slightly or add a handful of chopped dried apricots or dates for extra sweetness.

How do I get even baking?

Cut the scones to the same thickness and size, and space them evenly on the tray.

    Refrigerator

    FAQs

What fruit works best in scones?

Sultanas and raisins are traditional, but cranberries or mixed dried fruit also work well.

Can I make the dough ahead of time?

It is best baked fresh, but you can cut the scones and chill them for up to 2 hours before baking.

Why should I not twist the cutter?

Twisting seals the edges and prevents the scones from rising evenly.
